I am a snacker. And when 4pm comes around you bet that I’m rummaging around in search of a sweet pick-me-up to get me through the last part of the day. In an ideal world, where calories and waistlines don’t exist, this snack would be a biscuit or a cup cake, just something delicious. But, alas, I do not live in that world so I make these, what I think the internet calls ‘bliss balls’, or ‘boost balls’.. essentially their balls of dried fruit and nuts all rolled up into a little bite-size ball of yum.. and I love them! The quench my sweet-tooth, and don’t contain anything nasty. The perfect healthy alternative to an afternoon chocolate bar, or biscuit! Here are the recipes for three flavours, vanilla date and cashew balls, cocoa covered almond and date balls and almond, date and cranberry bars!

  • 1 cup pitted dates (or half and half of dates and cranberries)
  • 1 1/2 cup cashews/ almonds (or any other nut of your choice)
  • 1 teaspoon of cocoa powder
  • 1 teaspoon vanilla/ almond extract
  1. Blitz the nuts in a food processor, and transfew the crushed nuts to a separate bowl. If you’re making the vanilla, date and cashew balls set aside a handful of of nuts to cover the balls with.
  2. Now blitz your dried fruit, carefully add the nuts a little at a time making sure the mixture will hold together.
  3. Add your flavouring (this is optional)
  4. Remove from the food processor and roll the mixture into little balls, or press into bars.
  5. Roll the balls in a little cocoa powder, or the crushed cashew nuts you set aside
  6. Put in a sealed container and keep in the fridge
